小时酿造柿子醋的设备，自动酿醋设备，从果酒到出醋24小时，醋酸转化率不低于95%，采用现代工业技术与原始技术的结合使其稳定高产。同时
工艺手段在工业化大生产中应用了*的酶解技术，可分别对果胶质起到解脂作用产生甲醇和果胶酸，水解过程中产生半乳糖醛酸和寡聚半乳糖醛酸。酶的科学使用可将果胶质分解降低粘度，和破坏胶体保护，从而提高果汁产出率和加快澄清。确保了每公斤柿子可以生产3公斤优质果醋的高产标准。
